#EATFIT with Kate

Kate from @__cookingwithkate__ shares with us TWO delicious recipes—a healthy twist on the classic Carrot Cake as well as Raspberry and Dark Chocolate Bars; perfect snacks that are easy to make and a great option when you’re craving something sweet.


Carrot Cake

Carrot Cake

Ingredients:

  • 2 cups self-raising flour
  • 1/2 cup raw sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup milk
  • 1/2 cup olive oil or butter
  • 1 cup grated carrot
  • 1/2 cup walnuts

Icing

  • 1 cup cream cheese
  • 1/2 cup Greek yoghurt
  • 1 tbsp maple syrup

Method:

  1. Preheat the oven at 180 degrees Celcius.
  2. In a bowl, combine the sifted flour, raw sugar, baking powder and cinnamon. 
  3. Mix in the milk and oil.
  4. Roughly chop the walnuts and grate the carrots. Fold through the mixture.
  5. Add the mixture into a lined baking pan and bake in the oven for 40 minutes or until golden.
  6. To make the icing; whisk together cream cheese, yoghurt, maple syrup and vanilla until smooth.
  7. Add the icing on top when the cake has cooled.

Raspberry and Dark Chocolate Bars


Raspberry and dark chocolate bars


Ingredients:

  • 1 1/2 cup rolled oats
  • 1 cup plain flour
  • 1/2 cup shredded coconut
  • 1/2 cup crushed almonds
  • 2 tbsp raw sugar
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 2 tbsp water
  • 3/4 cup dark chocolate chips
  • 3/4 cup raspberries

Method:

  1. In a bowl, combine the oats, flour, coconut, almonds and raw sugar.
  2. Add in the honey, oil and water.
  3. Flatten out 3/4 of the mixture into a baking tray. Save the leftover mixture to crumble on top.
  4. Bake for 10 minutes at 180 degrees Celcius.
  5. Take out of the oven and add the chocolate chips and raspberries. Finally, crumble the leftover mixture and bake for a further 20 minutes.
  6. Allow to cool completely before slicing.

TIP: These bars are best stored in the fridge!


Kate has a love and passion for health, fitness and baking. She is also a competitive swimmer and has competed at both state and national level. To complement her swimming training, Kate also participates in running and strength training.
