#EATFIT with Dianna
This delicious Rocky Road recipe by Dianna (@diannayota) is a healthier alternative to your favourite childhood treat! It is simple to make and can easily be modified to include your own combination of ingredients. Perfect for gifts or as a sweet treat to end your day.
Ingredients
- 3/4 cup of cacao powder (Dianna uses @happywayau)
- 130g cacao butter
- 60g coconut oil
- 6 tbsp pure maple syrup
- 40g mini marshmallows
- 50g diced Medjool dates
- 30g diced dried mango
- 6 sugar free choc chip biscuits (chopped into chunks)
- Popcorn (handful to place on top)
- 35g chopped raw cashews
- 2 pinches of sea salt
- 6 squares of white chocolate (Dianna uses @loving_earth) + 1 tsp of coconut oil (for white chocolate drizzle).
Method
- Melt cacao butter & coconut oil together, then add maple syrup, cacao powder and salt, stirring until smooth.
- Add all other ingredients in except 2 biscuits, popcorn and choc drizzle ingredients. Mix together then pour into a lined container.
- Add remaining biscuits and popcorn in top, covering a few pieces with the chocolate. Then drizzle white chocolate on top and place in the fridge for 1.5 - 2 hours.
- Cut into bars and enjoy!!
