4-ingredient quick bake Scones

After school is hard work.  The kids are tired, but these fun, easy to bake 4 ingredient scones will mean their bellies are full and they can have fun making them.

Because they are quick to make and almost like a science experiment, they are perfect for a fun activity after school.

Make them with the kids favourite berries and enjoy.  They are even great for the lunchbox.  You can serve them with jam and cream if you like, but the fact that they are berry packed means you don’t have to.

Scones cut in half

The fact that they don’t require stacks of mixing time means they are easy to keep the kids on task, plus they bake quickly!

Ingredients

  • 1 cup thickened cream
  • 1 cup lemonade
  • 3 cups self raising flour
  • 1 cup berries of your choice (blueberries, raspberries, blackberries, quartered strawberries)

Instructions

  • Preheat oven to 180 degrees celsius.
  • Pour all ingredients into a large bowl and mix quickly. (Do not over mix)
  • Cover your chopping board with a dusting of flour and pour out the mix.
  • Flatten out into a rectangle approx. 30cm by 20 cm.
  • Place on a lined baking tray.
  • Using a knife score the top to make 10 slices.
  • Bake at 180 degrees Celsius for 15 minutes or until golden.
  • Remove from the oven and allow to cool for 5 minutes before moving to a wire rack to cool completely.

Serve with jam and cream

(or they taste just as good plain!).

Grazing platters

When the kids get home and you have very little time (or patience) before heading off to the next activity, you can hit some after school goals with a grazing platter.

By packing it full of veggies and yummy snacks that will help to boost the kids for the afternoon, you are also doing yourself a favour by getting veggies in pre dinner.

Fruit platter with cut up veggies and pretzels

It all comes down to presentation, make it look awesome and the kids will be all over it. After all, we eat with our eyes first.

This platter is designed to get in almost half the veggie requirements for kids in one hit, with cucumbers, carrots, celery and tomatoes.  Throw in some grapes for yumminess (half them if serving to under eights), strawberries, blueberries and raspberries and they won’t even notice how many healthy things they are eating.

Add some cheese for protein and your favourite snack biscuits for an extra bit of crunch and the kids will gobble it all up!
