#EATFIT with Torri
Hungry for something sweet?
Why not try this Protein Caramel Slice recipe by Torri from @cafeh_girls! This treat will satisfy all your caramel and chocolate cravings without the guilt. It is vegan, gluten free AND refined-sugar free.
This recipe makes between 12-14 slices, perfect to keep you going all week long.
Ingredients
Base:
- 4 medjool dates
- 4 tbls of tahini
- 3 tbls of vegan protein powder
- 1/2 cup of oats
- 2 tbls of rice malt or maple syrup
- 2 tbls of dairy free milk
Caramel:
- 2 cups of walnuts (or cashews)
- 3/4 cup of coconut sugar
- 4 tbls of coconut cream
- 3 tbls of rice malt or maple syrup
- (optional) 1 tsp vanilla, dash of salt
Ganache:
- 1/3 cup of coconut oil
- 2/3 cup of raw cacao
- 1/3 cup of rice malt or maple syrup
- 1/3 cup of coconut cream
Directions:
- Blend all base ingredients in a food processor or blender until crumbly and sticky
- Press mixture into a parchment lined tin
- Blend all caramel ingredients until smooth and sticky
- Spread caramel over the base
- Place mixture in freezer
- Over the stove top, melt coconut oil
- Then stir in cacao, syrup, and cream until a smooth ganache is formed
- Pour ganache over caramel
- Freeze slices for at least 3 hours
- Cut and enjoy!!! Store slices in freezer or fridge.
Torri started her Instagram account (@cafeh_girls) when she moved to Australia from Canada to celebrate her passion for health and wellness. Along with her love for health and cooking, came her love for fitness. While she has always enjoyed sports such as dance, field hockey, boxing, and yoga, she has recently fallen in love with online HIIT classes. Currently these are her favourite workout videos and she likes to incorporate these workouts, along with strength training and walking, weekly.
