#EATFIT with Raimee
Fresh, healthy and tasty!
This Zucchini Pancake recipe by Raimee Leigh Brook (@raimeeleigh.fitfood) is the perfect way to kick start your day the right way!
Ingredients:
- 1 medium zucchini (150g without liquid)
- 1/2 cup chickpea flour
- 1/2 tsp garlic salt
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1 tbsp savoury yeast flakes
- 1/2 tsp baking powder
- 1 tbsp of apple cider vinegar
- Water as needed
Method:
- Grate the zucchini and squeeze out as much liquid as you can.
- Place all dry ingredients into a mixing bowl, then add vinegar.
- Slowly add water until you get a thick pancake like consistency. You do not want it to be too runny.
- Pour the batter onto a low heat, lightly greased pan into the size of pancakes you would like. The smaller the quicker they cook.
- Once you see the edges turn a golden colour flip and let the other side cook for a minute.
- You can have them just as they are, but I like to add some healthy sides! For example, some spinach, avocado and eggs.
